Steps

  • Place the almonds in a mixer with the sugar and blend coarsely.

  • Transfer everything to a bowl, add the egg white, a pinch of salt, and mix with a spoon.

  • Take a portion of the mixture and form 6 balls, roll them in powdered sugar and place them on a baking sheet lined with parchment paper.

  • If the mixture is soft, you will get flat cookies like mine, if you like them puffier, add a few tablespoons of cornstarch or almond flour.

  • Bake at 350°F for 15 minutes.

  • Remove from oven and let cool.
