Pistachio Mimosa Cake
A pistachio-flavored mimosa cake made with a base of sponge cake and filled with a delicious pistachio cream, topped with diced sponge cake. What can I say, I love mimosa and pistachio, combining the two is a wonder. In past years, I have offered various types of mimosa cakes from the classic, to the strawberry, eggless, chocolate, pineapple, apple, etc.

Ingredients for the Pistachio Mimosa Cake:
9-inch cake pan
- 5 eggs
- 1 cup sugar
- 1 cup + 2 tbsps flour
- 1 tbsp baking powder
- 1 cup mascarpone
- pistachio cream
- 1¾ cups whipping cream
- sugar

Preparation of Sponge Cake:
In a bowl, put the eggs and begin to beat them with a whisk, add the sugar and continue whipping.
Add the sifted flour a little at a time and mix well. For a more intense color, add a bit of yellow food coloring. Finally, add the baking powder. Take a 9-inch cake pan, grease it, flour it, and pour in the mixture. Lightly tap it.
Bake at 350°F for about 40/50 minutes. If needed during baking, cover the top with aluminum foil.
Preparation of Cream:
In a bowl, put the pistachio cream, sugar, mascarpone, and mix. Add the cream and whip with the whisk.
Once the sponge cake is well cooled, remove it from the pan. Cut off the top and bottom crusts, then cut into three equal disks.
On one disk, remove the edge, then cut it into cubes.
Assembly:
Place the first sponge cake disk, soak it with water and sugar and flavors to taste. Add a layer of cream.
Level it. Put the second disk, soak it, and cover the entire surface with the remaining cream.
Add the previously cut sponge cake cubes on top. Decorate as desired and refrigerate for a few hours.
