- 2.2 lbs zucchini
- 8.8 oz spreadable cheese (or ricotta or cottage cheese)
- 3.5 oz cooked ham (or cooked)
- 3.5 oz black olives
- 0.7 oz extra virgin olive oil
- to taste mint
- to taste oregano
- to taste basil
- 1 clove garlic
- 7 oz cherry tomatoes

Steps
To make
The first thing to do is wash and trim the zucchini.
Then you need to slice them.
Take a hot cast iron grill and grill them on both sides.
As you grill them, set them aside, in the meantime prepare a dip with extra virgin olive oil, salt, pepper, oregano, and minced garlic. You can also add some mint if you like.
As you grill the zucchini, brush them with this dressing.
If some come out bad, it doesn’t matter; chop them and add them to
a chop of ham or bresaola, depending on your preference.
Mix with some spreadable cheese or ricotta, and cottage cheese is also fine.
Now mix everything well,
Spread the zucchini slices on a work surface
and evenly distribute the previously made mixture.
Now on a plate, let’s form the spiral, take the first zucchini petal and form a circle in the center of the plate
slowly take the other petals and
continue to form this spiral which,
in the end, would really look like a rose
Complete until all the slices are finished.
Finally, decorate with cherry tomatoes, olives, and basil and mint leaves, transfer to the refrigerator for at least half an hour before serving.
