- 2 3/4 cups baby spinach
- 1 fresh green onion
- 3 1/2 oz feta
- 3 tbsps cashews
- 3 tbsps dried cranberries
- 2 tbsps extra virgin olive oil
- 2 tbsps apple cider vinegar
- 1 pinch garlic powder
- to taste salt
- to taste black pepper

Start preparing the apple and Greek feta salad by making the dressing.
Put all the ingredients in a jar, that is extra virgin olive oil, apple cider vinegar, salt, black pepper, and garlic powder.Seal the jar with its lid and shake it well for a few seconds: as you can see from the photo, you’ll have a perfect vinaigrette in no time!
Wash the apples, remove the core, and slice them thinly.
Clean the fresh green onion and slice it into rings (I also used the green part, but if you don’t like it, you can discard it).
Assemble the salad: after washing and thoroughly drying the baby spinach, place them in a bowl or salad bowl.
Add the apples and Greek feta cut into cubes.
Finish with the cashews, dried cranberries, and sliced green onion.Dress the apple and Greek feta salad with its vinaigrette and serve immediately.
