A very fresh and at the same time nutritious salad, easy to make and you can prepare it a few hours in advance, and it will always be ready waiting for you.
I chose to use marinated zucchini carpaccio, a recipe that is so fashionable these days and especially on my blog.
More than a salad, this is a dish also rich in protein. I added some pitted black olives and Grana cheese flakes, which, if you want, you can easily replace with vegan cheese or tofu.

  • 5.3 oz cherry tomatoes
  • 2.8 oz black olives (pitted)
  • 2.8 oz Grana Padano DOP (in flakes)
  • to taste Tropea red onion (if you like)
  • to taste basil
  • to taste dried oregano
  • 2 tbsp lemon juice
  • to taste pepper
  • to taste salt
  • 3 tbsp extra virgin olive oil

  • 1 Mandoline
  • 1 Salad bowl

Steps

To make the

  • Start with the zucchini and their marinade.

    Wash the zucchini and remove their tips.
    Then with the help of the mandoline or a peeler, make very thin slices about 1mm thick.

  • Collect all the slices in a container and add:

    The lemon juice, oregano, salt, pepper, and extra virgin olive oil.

    Mix, close the container, and transfer it to the fridge for at least 2 hours.

  • After the time has passed, drain the zucchini from their marinade,
    Put them in a salad bowl and add:
    the chopped tomatoes,

  • the olives that you need to pit, the Grana cheese flakes, and if you like, some sliced Tropea onion.
