- 1 cup cup milk (your preferred type)
- 1.6 cups cup all-purpose flour (or FiberPasta flour or another low glycemic index flour)
- 2 eggs
- 2/3 cup cup erythritol (or sugar or 2 tbsp of stevia)
- Half packet baking powder
- 1 tbsp tbsp instant coffee
- as needed butter (for the pan or cooking spray)
- Half tsp vanilla essence
- as needed chopped pistachios (and almonds as desired)
- 1/2 cup cup yogurt (plain)
- 1/2 cup ricotta

Steps
To prepare
We’ll start with them:
Put the eggs in a bowl with milk, instant coffee, and vanilla
and mix well with the whisk or an immersion blender.
Then add the flour,
erythritol/sugar, baking powder, and vanilla essence, and mix until you get a smooth and homogeneous mixture.
Brush a pan with butter or cooking spray, and heat it well,
Then take a small amount of batter with a ladle
and cook the pancakes first on one side,
and as soon as you see small bubbles, flip them to the other side to complete cooking.
As they are ready, stack the cappuccino pancakes with diet mousse on a plate, and at the end
Prepare the mousse by simply mixing plain yogurt with ricotta.
Now they are ready to be filled.
