Ingredients
- 2 egg yolks
- 2 egg whites
- 1/4 cup sugar
- 1/3 cup flour
- 3 tbsps unsweetened cocoa powder
- 1/2 packet of baking powder
- 10.5 oz dark chocolate
- 2 cups plant-based cream
- 2 tbsps water + 2 tbsps coffee
Steps
Whip the egg whites until stiff peaks form
Separately, combine the yolks with the sugar and beat until you get a light and homogeneous cream
Add the egg whites to the mixture
Add the flour, cocoa, and baking powder
Mix
Place in a baking pan lined with parchment paper
Bake at 350°F for 10 minutes.
Chop the chocolate.
Whip 1 cup of cream
Heat the remaining cream (1 cup) and add it to the chopped chocolate.
Mix until you get a nice cream.
Add the whipped cream
Soak the sponge cake with the coffee syrup.
Add the mousse.
Refrigerate for at least 3 hours.
