Ingredients

  • 2 egg yolks
  • 2 egg whites
  • 1/4 cup sugar
  • 1/3 cup flour
  • 3 tbsps unsweetened cocoa powder
  • 1/2 packet of baking powder
  • 10.5 oz dark chocolate
  • 2 cups plant-based cream
  • 2 tbsps water + 2 tbsps coffee

Steps

  • Whip the egg whites until stiff peaks form

  • Separately, combine the yolks with the sugar and beat until you get a light and homogeneous cream

  • Add the egg whites to the mixture

  • Add the flour, cocoa, and baking powder

  • Mix

  • Place in a baking pan lined with parchment paper

  • Bake at 350°F for 10 minutes.

  • Chop the chocolate.

  • Whip 1 cup of cream

  • Heat the remaining cream (1 cup) and add it to the chopped chocolate.

  • Mix until you get a nice cream.

  • Add the whipped cream

  • Soak the sponge cake with the coffee syrup.
    Add the mousse.

  • Refrigerate for at least 3 hours.
