Ingredients for Baked Potatoes and Sausage
- 2.87 lbs potatoes (weight is after peeling)
- 1.32 lbs sausages
- 5 cloves red garlic
- to taste extra virgin olive oil (generous amount)
- 1 tbsp rosemary (fresh or dried)
- 1 pinch fine salt
- 4 quarts water (to soak the potatoes before cooking)

Baked Potatoes and Sausage Recipe Preparation
Start by peeling the potatoes, wash them well, cut them into large chunks, then place them in a bowl and cover with cold water (tap water is fine), let them rest this way for 15 minutes.
After 15 minutes, drain the potatoes well, pat them dry with kitchen paper and dry them thoroughly (leaving them in the bowl), then season them with a generous amount of oil (4/5 tablespoons), the rosemary, salt, and peeled garlic cloves, mix well with two spoons and spread them on the baking tray.
Preheat the oven to 482°F, and once at temperature, bake and let cook for 30 minutes without stirring.
Meanwhile, as the potatoes cook, remove the skin from the sausages, cut them into large chunks (I broke each sausage into 3 parts) and leave them in the bowl where you seasoned the potatoes, so they absorb the remaining seasoning.
After the first 30 minutes of cooking the potatoes, remove the tray, add the sausages, mix gently, and put back to cook for another 30 minutes. Once cooked, turn off the oven and serve the baked potatoes and sausage piping hot!
