Sweet Ravioli with Ricotta

Ingredients for sweet ravioli with ricotta:
- 1 1/2 cups flour
- 3 1/2 tbsp egg yolks
- 1 1/2 tbsp sugar
- 1 1/2 oz egg whites
- 2 tbsp Marsala
- 1 1/2 tbsp butter
- 1 tsp baking powder
- lemon zest
- 1 cup ricotta
- 1/2 cup sugar
- lemon zest
- 1 1/2 tbsp egg yolks
- chocolate chips
- rum flavoring
- rum
Steps

Dough preparation:
We put the flour, sugar, baking powder, some lemon zest, the egg yolks, the Marsala,
We add the butter, the egg white and knead for a few minutes. Wrap in cling film and put in the fridge for about 30 min.
Filling preparation:
In a bowl, put the well-drained ricotta, the sugar, lemon zest,
a bit of rum flavoring and rum, mix. Add the egg yolks.
Finally, add some chocolate chips.
Assembly:
Take a portion of dough and roll it out with a bit of flour. Try to form a rectangle then cut very wide strips.
Place a teaspoon of filling every 1/2 inch, then close (see video). Press around with your fingertips and then cut with a wheel. Continue until everything is finished.
Cook them in hot oil for a few minutes, turning them on both sides, then drain on absorbent paper and serve with plenty of powdered sugar.
