- 3/4 cup 2% fat Greek yogurt
- 1 cup oat flour
- 1 cup almonds
- 1/2 cup erythritol (or 35 stevia or 2/3 cup sugar)
- 2 eggs
- 1 packet baking powder
- 1 packet vanillin
- 4 cups apricots (weighed without pit)

Steps
To make
Recipe with beaters,
Preheat the oven to 356°F. Butter and flour a bundt cake pan (10 inches) and set aside.
Put the almonds in the bowl of your mixer, and grind until you obtain a flour.
Gather with a spatula and transfer it into a large bowl
where you need to add the whole oat flour, erythritol, yogurt, vanillin, eggs, and baking powder.
Mix with the beaters until you obtain a smooth and homogeneous mixture.
Transfer half of the mixture into the previously greased and floured bundt cake pan.
Slice the apricots into wedges and place half of them in the mixture now.
Then pour the rest of the mixture, and then the other apricot wedges.
Bake in the hot oven for 30 minutes (356°F), checking the cooking with the toothpick test.
Remove carefully from the oven and let it cool completely.
Then remove from the mold
Put the almonds in your Bimby bowl, grind for 10 sec at speed 10 until obtaining a flour.
Gather with the spatula, and you need to add the whole oat flour, erythritol,
yogurt, vanillin, eggs, and baking powder. Mix for 3 min at speed 3 until obtaining a smooth and homogeneous mixture.
Transfer half of the mixture into the previously greased and floured bundt cake pan.
Slice the apricots into wedges and place half of them in the mixture now.
Then pour the rest of the mixture, and the other apricot wedges.
Bake in the hot oven for 30 minutes (356°F), checking the cooking with the toothpick test.
