Stuffed Zucchini Bundles

Stuffed zucchini bundles, a diet recipe.

Since I started making this dish, it disappears in no time.

It’s a really tasty appetizer or main course, easy and fast to make, without cooking. You can prepare it ahead and find it ready when you return from work or a trip.
You can also present it at a buffet or aperitif and I’m sure you’ll make a great impression.
We’ll start with my recipe for marinated zucchini carpaccio to then create these fantastic bundles.
The filling can be of your choice; I filled them with ham and spreadable cheese, but you can also use ricotta or robiola, or whatever you desire, depending on your dietary needs.

  • 5.29 oz cooked ham
  • 5.29 oz spreadable cheese (or ricotta or robiola)
  • 10.58 oz cherry tomatoes
  • as needed arugula

  • 8 Cocotte
  • 1 Knife

Steps

To make

  • the first thing to do is marinate the zucchini, follow my recipe by clicking here.
    After marinating the zucchini, drain them well in a colander, then proceed as follows:

  • Use cocottes or similar molds, line them with the prettiest slices of marinated zucchini,

  • Until they are lined on all sides with excess hanging over, which will be used to close the bundles later.

  • then in the center, place in order: pieces of ham or other cold cuts of your choice,

  • next a little cheese,

  • then pieces of zucchini, maybe the more damaged ones,

  • then continue with more cheese, until you are almost at the edge of the cocotte.

  • With the back of a spoon, level the filling by pressing lightly,

  • Then fold the edges of the zucchini that protrude from the cocotte, pressing lightly.

  • Now flip the cocotte with a sharp tap on the base so the bundle easily comes out, and plate it by decorating with cherry tomatoes and arugula.
