Ingredients

  • 4 cups Manitoba flour (W 350)
  • 3 eggs (150 g)
  • 2/3 cup whole milk
  • 7 tbsp butter
  • 3/4 cup sugar
  • 0.42 oz compressed yeast (or 0.21 oz of dry yeast)
  • 1 tbsp orange (orange paste or grated orange peel)
  • 1 pinch salt
  • to taste chocolate chips
  • 1 egg yolk (for brushing)
  • 2 tbsp milk (for brushing)

Tools

  • 1 Stand Mixer
  • Parchment Paper

Steps

  • Pour the eggs into a jug

  • then add the milk and stir well

  • Pour the flour into the stand mixer

  • add the yeast

  • the sugar and

  • half of the liquids, that is, the eggs mixed with the milk.

  • Start mixing at low speed

  • When the liquids have absorbed the flour and sugar, pour in the other half.

  • Mix for at least 10 minutes and when the dough is slightly elastic, add the softened butter bit by bit.

  • Finish with the salt

  • The orange paste, find the recipe to prepare the orange paste by clicking the blue link among the ingredients above. Alternatively, you can replace it with the grated peel of an organic orange.

  • At this point, when the sides of the stand mixer are clean, pour the dough onto the work surface, fold it a few times

  • Shape it into a ball and let it rise in the oven with the light off, covered with a cloth for 2 hours.

  • The dough will have more than doubled.

  • Take many 2.8 oz pieces from the dough

  • Slightly spread them

  • place the desired amount of chocolate chips on top

  • close well and shape into a perfect circle

  • Place them on a baking sheet lined with parchment paper and bake in a hot oven at 356°F for about 10-12 minutes
