Ingredients
- 3 cups all-purpose flour
- 2 eggs (medium)
- 1/3 cup sunflower seed oil
- 6 tablespoons powdered sugar
- 2 lemons (zest of organic lemons)
- 2 lemons (juice)
- 1 pinch salt
- as needed powdered sugar (to coat before baking)
Steps
Place the eggs in a bowl
Add the powdered sugar
Add the lemon zest
Add the lemon juice
Add the sunflower seed oil
Add the flour along with the baking powder
Work the mixture until you get a smooth and homogeneous ball, then let it rest in the fridge for 10 minutes.
Take a piece of dough and form a small ball
Roll the balls first in granulated sugar
Then in powdered sugar
Place the cookies on parchment paper and bake in a preheated oven at 356°F for a maximum of 13 minutes.
