Ricotta and Orange Muffins…recipe for a healthy breakfast!

A light and fluffy pastry… to start the day well with a good breakfast but also for a healthy snack.

Ingredients

  • 1 3/4 cups flour
  • 1/3 cup potato starch
  • 2 eggs
  • 7/16 cup sugar
  • 15 7/8 oz ricotta
  • 1/2 cup vegetable oil
  • 1/2 cup orange juice
  • zest of one orange
  • 1 packet of baking powder

Steps

  • Separate the egg whites from the yolks and beat them until stiff. Set aside.

  • Add the sugar and orange zest to the bowl with the yolks

  • Whisk until creamy and light.

  • Add the oil and orange juice.

  • Combine the ricotta, then the dry ingredients: flour, potato starch, and baking powder.

  • Mix well

  • Fold in the egg whites gently without deflating the mixture.

  • Spoon the batter into paper cups

  • Bake in a preheated oven at 356°F for 25 minutes.
