- 1 3/4 cups flour
- 1/3 cup potato starch
- 2 eggs
- 7/16 cup sugar
- 15 7/8 oz ricotta
- 1/2 cup vegetable oil
- 1/2 cup orange juice
- zest of one orange
- 1 packet of baking powder

Steps
Separate the egg whites from the yolks and beat them until stiff. Set aside.
Add the sugar and orange zest to the bowl with the yolks
Whisk until creamy and light.
Add the oil and orange juice.
Combine the ricotta, then the dry ingredients: flour, potato starch, and baking powder.
Mix well
Fold in the egg whites gently without deflating the mixture.
Spoon the batter into paper cups
Bake in a preheated oven at 356°F for 25 minutes.
