Ingredients

  • lbs 1 ricotta cheese
  • cups 1 1/2 rice flour
  • cups 2/3 all-purpose flour
  • oz 1 3/4 Parmesan cheese
  • to taste salt
  • 3 sausages
  • 2 carrots, 1 small piece of celery, 1 shallot
  • to taste oil
  • 1/2 cup beer

Steps

  • Combine the ricotta with the flours, a pinch of salt, and the cheese

  • Quickly mix and roll out the ricotta dough with a rolling pin to a thickness of about 1/4 inch.

  • Define the edges with a knife and cut vertically into strips 3/4 inch wide.
    Cut horizontally as well to create small squares.
