Start preparing the savory salmon puffs by cleaning and finely chopping the red Tropea onion.
Wash and chop the chives as well.
Put the onion and chives in a bowl along with ricotta and stracchino.
Add the black pepper too.Mix well with a spatula until all the ingredients are well combined.
Transfer everything to a piping bag and set aside.Cut the puffs in half with a smooth-bladed knife. The movement should be quick and decisive to avoid breaking the puffs.
Fill both halves with the cheese filling.
If you don’t have a piping bag, you can also use a teaspoon.Place a piece of smoked salmon on one of the filled halves of the puffs.
Continue in the same way until all the ingredients are used up.Store the savory salmon puffs in the fridge for at least 30 minutes so that they can soften, then serve them.
