Super Soft Margherita Cake Without Butter!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup potato starch
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 5 eggs
  • 1 packet of baking powder
  • zest of 1 lemon
  • 1/2 lemon juice

Steps

  • Whip the egg whites.

  • Add the sugar to the yolks,

  • and the grated zest of one lemon.

  • Whip.

  • Add the oil, milk, and juice of half a lemon to the mixture

  • Add the flour,

  • potato starch, and baking powder.
    Mix well until you get a smooth and lump-free batter.

  • Add the whipped egg whites, fold them gently from bottom to top to keep them fluffy.

  • Place in a pre-greased and floured tin and bake in a hot oven at 356°F for 45 minutes.
