Steps
Clean the carrots, cut them and blend together with the oil and juice until you get a smooth cream
In a bowl, beat the eggs with the powdered sugar
Add the carrot cream and the lemon or orange zest, mix and combine the flours and baking powder
Mix everything until you get a dense but velvety mixture
