Ingredients

  • 9 oz carrots
  • 4 eggs
  • 2 cups powdered sugar
  • 1 cup almond flour
  • 1.7 cups flour
  • 0.4 cup lemon or orange juice
  • half the zest of a lemon or an orange
  • 1 packet of baking powder
  • 0.3 cup vegetable oil

Steps

  • Clean the carrots, cut them and blend together with the oil and juice until you get a smooth cream

  • In a bowl, beat the eggs with the powdered sugar

  • Add the carrot cream and the lemon or orange zest, mix and combine the flours and baking powder

  • Mix everything until you get a dense but velvety mixture
