Orange Paste for Leavened and Sweet Bakes

Ingredients

  • 1.32 lbs oranges (organic)
  • 1.32 cups sugar
  • 1/2 lemon (juice)

  • Hand Blender
  • 1 Saucepan

Steps

  • Wash the organic oranges well, preferably with thin skin. Cut them into pieces.

  • Place them in a bowl and add the sugar. Stir well and

  • add the lemon juice. Let it rest for 40 minutes.

  • Pour everything into a saucepan and cook for 20 minutes

  • Remove from heat when boiling

  • and blend everything into a cream using the immersion blender.

  • While still hot, place into a sterilized jar and

  • Let it cool upside down. Our orange paste is ready to be used in our doughs. I use this amount for about 40 preparations. It keeps in the fridge for a very long time.
