CANTONESE RICE

Cantonese rice is a dish of Chinese origin and is also very popular here with us. It’s not difficult to prepare, and it’s also quick. It’s a complete meal, besides rice, you can find peas, ham, and eggs. Who hasn’t ordered it at a Chinese restaurant? My son loves it, and even dad doesn’t mind! If you want to try making it at home too, here’s how I prepare it, with Bimby or without.

Ingredients for Cantonese rice

  • 1 cup Basmati rice
  • 3/4 cup frozen peas
  • 3.5 oz cooked ham (diced)
  • 2 eggs
  • 1 pinch salt
  • as needed sesame oil
  • as needed water (to cook the rice)

Preparation of Cantonese Rice

  • WITHOUT BIMBY: First, rinse the rice under water until the water becomes clear. Then put water in a pan to cook the rice. Using Basmati rice, we will need 1 3/4 cups of water, which is double the weight of the rice used. Pour the rice into the water, cover with a lid, bring to a boil, and then lower the heat and continue to cook until the water is completely absorbed.

  • Once cooked, we remove it from the heat and set it aside. In another pot, scramble the eggs with a drop of sesame oil, then add the ham and peas. Cook for a couple of minutes, then set aside. At this point, pour the rice into the pan and quickly toss it with more sesame oil. Add the seasoning, mix, and serve.

  • WITH BIMBY: Place 3 cups of water and a pinch of salt in the bowl, set to speed 1 at 212°F for 10 minutes. Meanwhile, place the rice in the basket and rinse it under water. Take the Varoma, put peas and ham inside it, while on the tray, place parchment paper on which we will position the beaten eggs.

  • After 10 minutes, place the basket in the bowl, close with the lid (without the measuring cup), and place the Varoma on top. Cook everything for 15 minutes at Varoma temperature, speed 1. Pour peas, ham, rice, and the omelet cut into small pieces into a bowl. Mix and serve immediately.

Notes

Cantonese rice can be stored in the refrigerator for 2 days.

It can also be served lukewarm or cold.
