The recipe I’m suggesting today is a delicious lemon cream that you can use to fill your tarts. It’s a must-try because it’s incredible and will make your desserts absolutely irresistible. I don’t know how it made it to the cake. I kept nibbling on it, spoonful after spoonful. I cleaned the spatula, the bowl, the lid. I strongly recommend considering it because it’s worth it.

Ingredients for Lemon Cream

Since this recipe also uses lemon zest, it is absolutely necessary that they are organic, untreated. Remember that the peel of common lemons is not edible.

With these quantities, you will prepare lemon cream suitable for filling a cake.

  • 0.88 oz lemon zest (cleaned weight – about 2 lemons)
  • 0.46 cup lemon juice
  • 0.71 oz butter
  • 2 eggs (medium)
  • 3.53 oz granulated sugar

I prepared this lemon cream with the Thermomix. Those who do not have this appliance can follow the procedure indicated at the end of this article and cook it in a small pot.

  • Peeler
  • 1 Small pot (I used the Thermomix)

Preparation of Lemon Cream

  • Wash the lemons very well and dry them by patting with kitchen paper.

    Using a peeler, remove the zest. It is crucial to remove only the yellow part. Then, eliminate any white part with a knife as it would give a bitter taste to the cream.

  • Squeeze the lemons (you will need 0.46 cups of juice)

  • Put the zest in the bowl and chop for 15 seconds at speed 8.

  • Gather it into the center of the bowl and add the lemon juice, eggs, butter pieces, and sugar.

  • Cook for 8 minutes at 194°F and at speed 3.

  • Finally, remove it from the bowl and let it cool.

    Once cooled, the lemon cream is ready to be used. Enjoy! Paola

  • Whip the eggs with the sugar. Add the melted and cooled butter. Gradually add the lemon juice, and finally, also add the zest. Mix well, then transfer to the heat and cook over low heat until the cream thickens.
