Country-Style Gratinated Swiss Chard

These country-style gratinated Swiss chard are a surprisingly delicious dish. They are easy to prepare, creamy, very tasty, and deliciously stringy thanks to the addition of fontina in the mixture. I highly recommend them.

Ingredients for Gratinated Swiss Chard

You can substitute fontina with gouda or scamorza. The important thing is to use a cheese that melts.

  • 1 head Swiss chard (about 1.3 lbs)
  • 1 large yellow onion
  • 2 tbsp flour
  • 2.5 tbsp butter
  • 3/4 cup milk
  • 3 oz fontina
  • 1.5 oz grated Grana Padano (or Parmigiano)
  • salt
  • black pepper

Preparation of Gratinated Swiss Chard

  • Remove the bottom of the Swiss chard head, detach all the leaves, and wash them thoroughly under running water. 

    Then cut the stems (what are normally called ribs) separating them from the green part (the leaves)

  • Cook the stems starting from cold salted water. This way they will stay white. It will take about 10/15 minutes from boiling depending on their size.

  • Once soft, remove them from the pot with a slotted spoon and plunge the leaves into the now boiling water. Cook them for five minutes, then drain them with the slotted spoon.

  • Transfer the stems and leaves of the Swiss chard to a cutting board and chop them coarsely.

  • Also coarsely chop a large onion. 

  • In a pan, melt 2 tbsp of butter, then add the chopped onion. Sauté it until it becomes slightly golden, then add the flour and let it toast for a moment.

  • At this point, add the vegetables and season with salt and pepper to taste.

  • Now add the milk and stir over medium heat until you get a soft mixture. Count a few minutes from when it starts boiling again. Adjust the salt if necessary.

  • With the remaining butter (1 tbsp), grease the bottom and sides of a baking dish and make a first layer of Swiss chard. 

  • Cut the fontina into pieces and place them over the Swiss chard.

  • Then cover everything with the remaining Swiss chard and level with a spatula.

  • Finally, sprinkle the entire surface with grated cheese. 

  • Bake in a preheated static oven at 350°F for 15 minutes, then switch to grill mode for a few more minutes until golden.

    Take the gratinated Swiss chard out of the oven and let them cool slightly before serving. Enjoy! Paola
