These onion flatbreads are delicious substitutes for bread that cook in a pan. They are easy to make, economical, and very appetizing. They also require just an hour of resting time. Come on… let’s get started!

Ingredients for the Onion Flatbreads
- 2 3/4 cups all-purpose flour
- 1 fresh green onion
- 1 cup water
- 1 tsp instant yeast for savory preparations
- 1 tsp salt
- vegetable oil
- fleur de sel

I prepared the dough for these onion flatbreads with a Thermomix, but you can make it with any other mixer or knead it by hand by working the ingredients in a bowl and then on a work surface.
- 1 Mixer (I used Thermomix)
- 1 Bowl
- Rolling pin
- 1 Tray
- 1 Pan
Preparation of the Onion Flatbreads
Place the flour, instant yeast, salt, and water in the mixer bowl and knead for 2 minutes at Spiga speed.
Clean the green onion by removing the roots and green part, and finely chop the white part. Do not discard the green part as it will be needed at the end of the recipe.
Add the green onion to the dough and knead again for 1 minute at Spiga speed: you should obtain a slightly sticky but easily workable dough. If it is too hard, add a tablespoon of water; if it is too soft, add a little flour and knead for a few moments at Spiga speed.
Remove the dough from the mixer bowl, knead it with your hands on a floured work surface, shape it into a ball, cover it with a bowl, and let it rest for an hour at room temperature.
After the resting time, divide the dough into 6/7 pieces.
Work each piece with your hands and roll it out with a rolling pin to give it a circular shape.
Place the onion flatbreads on a floured tray as you go.
In a pan, heat a few tablespoons of oil and cook the flatbreads for a few minutes on each side until they are nicely golden brown.
Once ready, transfer them to a serving plate (even better, a cutting board), season with some fleur de sel and sprinkle with rings obtained by cutting the green onion stalks with scissors.
Serve the onion flatbreads immediately, while they’re hot. Enjoy! Paola
