Steps for the Muffins
Before starting the batter, preheat the fan oven to 356°F, then proceed.
In a bowl with a hand or electric whisk, or a food processor, whichever is more convenient for you, beat the eggs with the sugar, add the grated zest, oil, and finally the sifted flour and baking powder, work and mix everything well.
Peel and dice the apples and add the cinnamon, then also chop the chocolate bar, add and mix well into the batter, without overworking the mixture.Place paper liners in the muffin molds, fill them with the batter leaving half an inch from the edge, and then bake.
Bake the muffins in a preheated fan oven at 356°F for about 20 minutes; you can also use the static mode with a few more minutes of baking.
In any case, the muffins are ready when they are puffed up and well browned, as the minutes vary depending on the power of your appliance.
You can also bake the muffins in the air fryer, always preheated to 356°F for about 12 minutes, at least that’s how long mine took.Once cooked, take them out of the oven, let them cool slightly, then sprinkle with powdered sugar and serve!
Storage, Tips, and Variations
The muffins keep fresh for about 2-3 days, great warmed up before serving.
You can decorate them before baking with slices of fruit on the surface or add sugar sprinkles, also great with the addition of nuts.
You can flavor the batter with vanilla and use orange instead of lemon.
