Ingredients
- 1 sponge cake (9-inch)
- 250 g mascarpone
- 1 cup g fresh heavy cream (unsweetened)
- 3/4 cup g powdered sugar
- 3/4 cup g coconut flour
- to taste coconut flour (for garnish)
- 2/3 cup g water (hot or milk if preferred)
- 1 tbsp g sugar

Steps
First, make a cocoa sponge cake. You can find the recipe among the ingredients.
Prepare the delicious filling. Pour the mascarpone into a bowl
add the unsweetened heavy cream
add the powdered sugar
Whip well with an electric whisk
add the coconut flour
Mix well until you reach the right consistency
Prepare the soaking syrup by adding sugar to the hot water. If you prefer, you can replace the water with milk or choose a liqueur diluted with water.
Cut the sponge cake in half and soak the first layer
Fill with half of the cream
and spread well.
Soak the second layer and place it on the cake.
With a spatula, cover with the remaining cream on the sides as well.
Cover with more coconut flour.
