Pasta with Broccoli and Sun-Dried Tomatoes

Today I’m offering you a delicious pasta with broccoli. Sun-dried tomatoes and capers are the other ingredients that enrich the sauce of this fantastic main course. A rich dish, very easy to prepare, and so tasty that everyone in the family loved it.

Ingredients for Pasta with Broccoli and Sun-Dried Tomatoes

  • 10.5 oz pasta (any type you like)
  • 14 oz broccoli (net weight without waste)
  • 3.5 oz sun-dried tomatoes in oil (drained weight)
  • 0.7 oz capers
  • A few anchovy fillets in oil (amount to taste)
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of Pasta with Broccoli and Sun-Dried Tomatoes

  • Clean the broccoli, divide it into florets, and wash them thoroughly under running water. I recommend cleaning the stalk as well, as it’s delicious.

  • In a pot, bring plenty of salted water to a boil. Once boiling, plunge the florets and stalk in and blanch them for a couple of minutes. Then drain them with a slotted spoon, reserving the cooking water for the pasta.

  • Cut the florets into small pieces to reduce their size. If you kept the stalk, cut it into small pieces as well.

  • Drain the sun-dried tomatoes from the preserving oil and cut them into strips.

  • Desalt the capers under running water and dry them by patting with kitchen paper.

  • In a large pan, heat a few tablespoons of oil before adding the anchovy fillets.

    Crush them with the back of a wooden spoon to make them dissolve.

  • Then add the sun-dried tomatoes and capers, stirring for a few moments over medium heat.

  • Finally, add the broccoli florets and let them season, pouring in a few tablespoons of cooking water.

  • Meanwhile, bring the broccoli cooking water back to a boil and cook the pasta in it. Drain it al dente and transfer it directly to the sauce pan. Stir to mix all the ingredients well and adjust the salt if needed.

  • Serve the pasta with broccoli and sun-dried tomatoes on individual plates, drizzled with a little raw olive oil and freshly ground black pepper, and serve immediately, very hot. Enjoy! Paola
