Eggless Christmas Cake
A festive Christmas cake made with an egg-free cocoa base and three delicious layers of chantilly cream and caramel chocolate ganache… I tell you, I can’t find the right words to describe how delicious this cake is. A cake we can enjoy this time of year, to include in the Christmas menu, for the New Year’s Eve dinner, and more. Ingredients for the Eggless Christmas Cake:
- 7/8 cup milk
- 3 1/3 tbsp whipping cream
- 5 oz sugar
- 1 1/2 tbsp butter
- 2 tbsp cornstarch
- 2 tbsp rice starch
- 1 cup whipped cream
- lemon
- 7 oz milk chocolate
- 2/3 cup whipping cream
- 1 1/2 tbsp butter
- 1 oz glucose
- 5 oz sugar
- 1 tbsp water
- 7/8 cup milk
- 1 1/4 cups flour
- 1 container plain yogurt
- 1/2 cup unsweetened cocoa powder
- 1 sachet baking powder
- 5 tbsp vegetable oil
- 5 oz sugar

Chantilly Cream Preparation:
In a bowl, put the milk, the cream (50 ml), and the lemon peel and heat. In another bowl, mix the sugar, rice starch, and cornstarch. Gradually add the boiling milk and mix well with a whisk to avoid lumps.
Add a bit of vanilla. Cook in the microwave until it thickens, taking it out every minute to stir. Once thickened, add the butter.
Remove the lemon peel. Detach the cream from the edges and cover with cling film. Chill in the fridge or freezer to cool quickly.
Then add the whipped cream and combine.
Caramel Chocolate Ganache Preparation:
In a saucepan, put the sugar and water and let it caramelize.
Once the caramel is ready, gradually add the cream and bring to a slight boil. Pour it immediately over the chocolate.
Add the butter and mix well. Add the glucose and stir. Cover with cling film and let it cool.
Base Preparation:
In a bowl, put the flour, sugar,
Add the cocoa, baking powder, and mix. Add the yogurt,
Add the milk, oil, and mix well. Pour the mixture into the pan.
Spread and level. Slightly tap. Bake at 356°F for about 20 min. Once baked and well cooled, cut the edges.
then divide it into three equal parts.
Assembly:
Place the first piece of base, add a layer of chantilly cream using a piping bag. Place the second piece of base.
Press slightly and put a layer of ganache on top. Add the third piece, press it a little. Cover with another layer of chantilly cream!
