Ingredients
- 8 potatoes, with skin, cooked, boiled
- to taste salt
- to taste pepper
- to taste oregano
- to taste extra virgin olive oil
- to taste goat cacioricotta

Steps
The first thing to do is to thoroughly wash the potatoes under running water and remove all impurities. Boil in plenty of water for 20 minutes. The potatoes I used weigh 100 g each; if you find them a bit larger, you will need to extend the cooking time.
Remove from water, drain well and let them cool for a few minutes.
Slightly mash them, but not too much, with a potato masher or with the bottom of a glass.
Place two potatoes on a sheet of parchment paper. Season with salt, pepper, oregano, cacioricotta, and extra virgin olive oil.
Wrap the potatoes with parchment paper.
Place directly in the pan.
Make sure to cover with a lid, leaving a small opening.
