Would you like to make some really delicious fresh pasta at home? These whole wheat straccetti have a very delicate taste and are made with whole wheat flour and all-purpose flour. They are very easy to make at home and cook in just a few minutes. Of course, you can prepare them in advance and freeze them.

Ingredients for Whole Wheat Straccetti
- 3/4 cup whole wheat flour
- 1 cup plus 2 tbsps all-purpose flour
- 2 eggs (medium)
- 1 tbsp extra virgin olive oil
- water
- salt

- Stand Mixer (I use Bimby)
- Pasta Machine
- 1 Cutter smooth or fluted
Preparation of Whole Wheat Straccetti
With the BIMBY: put all ingredients in the mixing bowl and select the Kneading function for 3 minutes. Add the necessary water through the hole to get an elastic dough. Of course, you can use any other appliance that kneads.
You can also do everything BY HAND.
In this case, sift the two flours together and make a well on the work surface. Place the whole eggs, oil, and salt in the center. Mix, using a fork, gradually incorporating the flour from the sides of the well. Add a little water at a time until you get a firm and elastic dough, and continue kneading with your hands for a few minutes.
Form a ball with the dough, cover it with plastic wrap, and let it rest in a cool place for at least half an hour.
After the resting time, transfer the dough onto a lightly floured work surface and roll it out with either a rolling pin or using the classic hand-crank pasta machine, also known as Nonna Papera. You should obtain not excessively thin sheets (I used the machine and stopped at the penultimate hole).
With a cutter (you can use either smooth or fluted one depending on how you want your whole wheat straccetti to look), cut strips about 1.5-2 inches wide along the length, and then cut them into irregular diamonds or triangles (here too, it is up to you to decide based on your preferences).
Cook the whole wheat straccetti fresh pasta in boiling salted water for 3-4 minutes, drain them al dente, and season as desired. Enjoy! Paola
