Neapolitan Roccocò
It is well known that Neapolitan cuisine is famous worldwide for its culinary delights. Among the many typical things prepared during the Christmas period are the roccocò! Dry cookies shaped like a donut that keep for a long time as they are made without eggs, milk, or butter, just using flour, almonds, water, aromas, and pisto, or a mix of spices of your choice. In fact, if you use vegetable milk to brush them at the end, you will get vegan roccocò! If you don’t have pisto or don’t like certain spices, you can create them by mixing the spices you prefer. The original pisto contains star anise, cloves, cinnamon, a pinch of pepper, nutmeg, and coriander, but everyone can modify it according to their taste! These cookies are very simple to prepare and are also great to give as a gift to our loved ones for the holidays!

Ingredients for Neapolitan Roccocò:
- 2 cups flour
- 3.5 oz water
- 1 cup almonds
- 1 cup sugar
- 1 tbsp unsweetened cocoa powder
- 1/4 tsp baking ammonia
- lemon zest
- orange zest
- pisto (Or spices of choice)
Steps
The preparation of Neapolitan Roccocò is very simple and quick, watch the video HERE.
First, slightly process half of the almonds, then add them (all almonds) to the flour. Add sugar, cocoa, pisto, or spices of choice.
Add the baking ammonia and mix. Add a bit of lemon and orange zest, water, and knead until you get a homogeneous mixture. Cut it into pieces.
Roll out one piece at a time and form into rings. Continue until the dough is finished. Arrange the cookies on a baking tray lined with parchment paper, keeping them a bit apart.
Brush them with egg or milk or any type of vegetable drink (if you don’t want the vegan version) and bake at 356°F for about 20 minutes.
