After preparing (and loving) coconut ghoriba and almond ones, here are the new arrivals. These are orange ghoriba, delightful cookies that are very easy to make. They are made with semolina flour, contain no butter, and their characteristic is that they crack during baking. They are perfect to accompany a tea or to munch on any time of the day when you crave something sweet. I assure you that you will love them.

Ingredients for Orange Ghoriba
With these quantities, I made 14 cookies, but of course you can double the amounts if you want to make more.
- 1 1/4 cups semolina flour
- 1 tsp baking powder
- 1 egg (medium)
- 1/3 cup sugar
- 3 1/3 tbsp vegetable oil
- 1 orange (organic, untreated)
- powdered sugar (for coating)
Tools
- 2 Bowls
- Electric Mixer
- 1 Hand Whisk
- 1 Grater for citrus
- Citrus Juicer
- 1 Plate
- 1 Baking Tray
Preparation of Orange Ghoriba
Pour the semolina flour into a bowl, add the baking powder, and mix with a small hand whisk.
In another, larger bowl, put the egg and sugar and beat them with an electric mixer until you get a light and fluffy mixture.
Then add the oil and mix again with the mixer.
Wash the orange very well, dry it, and grate the zest with a citrus grater before squeezing out 4 tsp of juice.
Add the zest and 4 tsp of orange juice to the egg mixture and mix with a spatula.
Then gradually incorporate the flour + baking powder and mix all the ingredients well: you will get a rather soft mixture. If it is too soft, add a few more grams of flour.
With a spoon, take 1 oz of dough, form a ball with your hands, and roll it in powdered sugar until it is completely coated.
Place the orange ghoriba on a baking tray lined with parchment paper, keeping them spaced apart because they will spread during baking.
Bake the ghoriba in a preheated static oven at 340°F for 15 minutes. You will see that they will gradually grow and crack.
