Need to organize an aperitif? Found yourself without bread? Looking for a snack? Then these rosemary squares might be just what you need. They don’t require leavening, only a short 15-minute rest; they mix very quickly either by hand or with a mixer and are very tasty. Save the recipe for the next opportunity.

Ingredients for Rosemary Squares
- 2 1/2 cups type 1 flour
- 1 tsp rosemary (weight of needles only)
- 1/4 cup extra virgin olive oil
- 1/3 cup dry white wine
- 1/4 cup water
- 1 tsp salt (1 teaspoon)
- chili powder (quantity to taste)

For the preparation of these rosemary squares, I used the Thermomix, but you can also knead by hand or with a stand mixer.

- Rolling pin
- 1 Fluted cutter
- 1 Baking sheet
Preparation of Rosemary Squares
Put the rosemary needles in the bowl with 50 g of flour taken from the total and chop (15 sec. speed 8). If you don’t have a Thermomix, use a grinder.
Then add the remaining flour, water, oil, white wine, salt, and chili powder (the latter can be added to taste depending on personal preference and can be omitted if not desired) and knead until you get a soft and elastic dough (1.5 min. speed Knead).
Transfer it to the work surface, work it a few moments with your hands, shape it into a ball, wrap it in plastic wrap, and let it rest for 15 minutes at room temperature.
After this short rest, transfer the dough onto a sheet of baking paper and roll it out with the rolling pin to a thickness of about 1/8 inch.
Use a fluted cutter to cut the dough into squares, then transfer the sheet of baking paper onto the baking sheet. I separated the squares from each other, but it’s not necessary to do so.
Bake the rosemary squares in a pre-heated static oven at 356°F for about 30 minutes or until they turn golden. Remove from the oven and let them cool before enjoying (this will be the hardest part). Enjoy! Paola
