Welcome back! Today I have a really good recipe for you: penne with salmon. It’s a delicate and very tasty first course. I find it perfect when you have guests, but that doesn’t mean you can’t easily prepare it for a simple family dinner since it’s quick (actually, super quick) to make. A dish that will make you look good without too much effort. So if you’re short on time or new to cooking, well, this is an ideal recipe.

Ingredients for penne with salmon
- 12.7 oz penne rigate
- 7 oz smoked salmon
- Half onion (white or golden)
- 2/3 cup fresh liquid cream
- 1 tbsp butter
- to taste brandy
- extra virgin olive oil
- salt
- black pepper

Preparation of penne with salmon
Cut the smoked salmon slices into small pieces.
In a large pan, put the butter together with a couple of tablespoons of oil.
When the butter has melted, add the finely chopped onion.
Let it sizzle for a moment, then add the salmon pieces.
Cook over medium heat, stirring occasionally until the salmon turns light.
At this point, deglaze with a little brandy and let it evaporate completely.
Finally, add the cream and continue cooking until the sauce has slightly thickened. Adjust with salt and pepper.
Meanwhile, cook the penne in plenty of salted boiling water; drain them al dente and transfer them directly into the pan with the sauce, saving a few tablespoons of cooking water to use if needed to soften the sauce. Mix well to combine all ingredients.
Distribute the penne with salmon on individual plates, sprinkle them with freshly ground black pepper, and serve immediately, piping hot. Enjoy! Paola
