beef salad
This recipe is a great appetizer for the Christmas season and beyond, I make it all year round. This salad was and still is my favorite dish at parties. At my house, it was never missing during the most important celebrations like Christmas, New Year’s, Easter, etc. The original recipe, as you can deduce from the name, is made with beef, but personally, I don’t like this type of meat, so I make it with chicken or pork, or both as my mother used to and still does. It’s a very convenient recipe because it’s a cold dish, so we can prepare it well in advance and keep it in the fridge until the right moment!

Ingredients for the beef salad:
- 4 potatoes
- 6 carrots
- 1.4 oz olives
- 1.1 lbs pork meat (Or chicken)
- 3.5 oz peas, canned, drained
- 5.3 oz pickled gherkins
- to taste mustard
- 14 oz mayonnaise
- salt

Start the preparation by cutting the pickled gherkins, boiled potatoes, boiled carrots, and cooked (boiled) meat into very small cubes and place them all together in a very large container.
Add the well-drained peas, pitted olives, salt to taste, a bit of mustard, and the mayonnaise (adjust the quantity as you mix and add more if needed, depending on your taste).
Mix everything well. Put the obtained mixture on plates then assemble and decorate as you like. I added a thin layer of mayonnaise, and made decorations using black olives, peas, pickled peppers, basil, and parsley!
