  • 1/2 cup g unsweetened cocoa powder
  • 1/2 cup g coconut butter (or almond butter)
  • 1 cup g erythritol (or 1/6 cup stevia)
  • 4 eggs (7 oz)
  • 3/8 cup g milk (or water or plant-based milk)
  • 1 packet vanillin
  • 1 tbsp g baking powder
  • 1/4 cup g dark chocolate chips (optional)
  • 1/4 cup g almonds
  • 1/4 cup g dark chocolate chips
  • as needed colored sugar sprinkles (optional)

Steps

To make

  • Preparation
    Take the eggs and butter out of the fridge at least 3 hours in advance.
    Preheat the oven to 355°F static

  • Put in the bowl of your stand mixer or in a bowl if you’re mixing with beaters: the erythritol, eggs, and water/milk, and beat at maximum speed until the mixture is frothy,

  • then melt the butter in the microwave or in a double boiler and add it to the mixture while the beaters are still going.

    Sift the FiberPasta flour with the vanillin, cocoa, and baking powder, and gradually add the dry ingredients to the mixture while the beaters are running at medium speed.

    At this point, add 50 g of chocolate chips and mix again

  • Transfer the mixture into a dove-shaped mold (500 g) and spread it evenly.
    Sprinkle the surface with the remaining chocolate chips, almonds, and, if desired, colored sugar sprinkles.

  • Bake in a hot oven for 40 minutes (355°F). Do the toothpick test in the center.
    Carefully remove from the oven and let the dove cake cool completely in the mold.

  • Put in the Thermomix bowl, the butter, erythritol, eggs, and water, close the measuring cup: mix: 4 min. at 98°F/speed 4.
    Meanwhile, sift the FiberPasta flour, with vanillin, cocoa, and baking powder.

  • Add the dry ingredients to the mixture little by little through the aperture with the Thermomix at speed 3 and mix until the mixture is smooth and uniform.
    Add 50 g of chocolate chips, and mix: 10 sec./reverse/speed 4.

  • Transfer the mixture into a dove-shaped mold (500 g) and spread it evenly, and sprinkle the surface with the remaining chocolate chips, almonds, and, if desired, colored sugar sprinkles.

  • Bake in a hot oven for 40 minutes (355°F). Carefully remove from the oven and let the dove cake cool completely in the mold.
