Today a very tasty dish: Fried Creamed Salted Cod Bites. Creamed cod is a typical Venetian dish, which is salted cod made extremely creamy with extra virgin olive oil after being combined with milk. In the original recipe there is no potato, but with the potato I assure you that the taste improves.. It’s up to you whether to include it or not. I assure you it’s uniquely delicious. Ideal to enjoy as an appetizer with good toasted bread to make croutons. I made delicious fried bites of creamed cod that I recommend you make as soon as possible. In this case, I bought the cod already desalted, but if you cannot find it and have instead stockfish, which is salted cod to be soaked, I advise you to leave it soaking for 24 to 36 hours to completely remove the salt, and change the water every 8 hours so that the dissolved salt does not come back into contact with the fish flesh.

Ingredients
- 2.2 lbs desalted cod (or stockfish to be soaked)
- 2 cups potatoes (optional, I like it more)
- as needed extra virgin olive oil
- 1 clove garlic
- 1 stalk celery
- 1 onion
- 1 carrot
- 2 leaves bay leaf
- 3.4 cups whole milk
- as needed all-purpose flour
- 2 eggs
- 1 cup breadcrumbs
- 2 cups peanut oil
Tools
- 1 Stand Mixer
- 1 Pot
Steps
Wash and cut the potatoes
Cut them into chunks and boil them for 15/20 minutes in boiling water until softened
Cut the soaked cod
In a pan, sauté the garlic with olive oil
Add the cod
Cook until it flakes well and remove the garlic
In another pan, sauté with oil, carrot, celery, and onion cut into pieces.
Add the milk and bring to a boil
Pour into a bowl
Filter and remove the carrot, celery, and onion
Pour the filtered milk back into the pan
Add the potatoes
the cod, bay leaves, and a pinch of pepper
Cook on low heat for 20 minutes
Remove the bay leaves
Pour into the stand mixer and work it with the paddle attachment, drizzling in the oil, taste and adjust for salt and pepper
We will thus obtain our creamed cod. Let it cool.
Form our balls or bites
First pass them in flour
then in the egg
and finally in the breadcrumbs.
Fry in plenty of peanut oil and enjoy our fried creamed salted cod bites.
Storage
You can store the uncooked bites in an airtight container in the fridge for 1 day.
If cooked, you can store them in the fridge, still covered, for 2/3 days.
Raw in the freezer they can last for 3 months and cooked for 2 months. Before cooking them, let them thaw in the fridge before consuming.
