Ingredients

  • 4 cups g all-purpose flour
  • 1 1/2 cups g water
  • 2 1/2 tsp g fresh yeast
  • 2 tbsp cucchiai olive oil
  • 2 tsp g fine salt
  • 1 tsp sugar
  • to taste tomato sauce (seasoned with oil, salt, and dried basil)
  • to taste pizza mozzarella
  • to taste grated cheese
  • to taste capers and anchovies

Steps

  • Dissolve the yeast in water with the sugar, add the flour and salt, and knead.

  • Add the oil and continue kneading.

  • Now let rest for about 30 minutes, then do 3 rounds of folds in the bowl at 30-minute intervals.

  • Let rise until doubled.

  • Divide the dough into 6/8 balls and let rest for about 1 hour.

  • Oil a baking sheet and roll out 2 balls at a time.

  • Top with tomato sauce, capers, anchovies, and a drizzle of oil. Bake at 392°F for about 20 minutes.

  • Add the mozzarella and grated cheese and cook for another 10 minutes.

  • Once cooked, fold and serve.

  • Pour water, yeast, and sugar into the bowl. 50 seconds at speed 3.

  • Add the flour and salt and knead for 2 minutes at spike speed.

  • Add the oil and knead another 2 minutes at spike speed.

  • Proceed as previously described.
