Today I offer you a risotto that, in my opinion, is unmatched… Risotto with Stracciatella and Broccoli Rabe Cream. After making the broccoli rabe and stracciatella cream, I thought of combining it with a simple risotto and, believe me, it delighted all my guests. Tasty and fragrant, it will win you over at the first taste and make you look great. As with all risottos, the most important thing for its success is the choice of ingredients, so good broccoli rabe and especially the tops, not just leaves, good Carnaroli rice, and delicious stracciatella.

Ingredients
- 10.5 oz pesto (with broccoli rabe and stracciatella)
- 1.4 cups Carnaroli rice
- 1/2 onion
- as needed extra virgin olive oil
- 1 oz Parmigiano Reggiano DOP
- 1 oz butter
- 3.5 oz stracciatella
- 2 cups water (from cooking the boiled broccoli rabe to create the pesto)

Steps
In a wok or non-stick pan, toast the rice with oil and onion.
Add the hot cooking water from the boiled broccoli rabe (used to prepare the broccoli rabe cream) whenever the rice requires it
Near the end of cooking, add the broccoli rabe cream.
Add the cheese
Turn off the heat and stir with the butter
Serve our risotto with broccoli rabe cream with some delicious stracciatella.
