Savory Pie with Pane Carasau

This is a truly genius recipe. It was suggested to me by a friend, who had it recommended by another friend, who probably got it from yet another friend, and so on. You know how these things go, right? What matters is that it reached me. I love savory pies. They’re delicious and also convenient because they solve the problem of what to prepare in one go. This savory pie with pane carasau also has the advantage of not being overly greasy. Yes, because instead of the usual puff pastry, this fantastic Sardinian bread is used, which doesn’t contain even a gram of butter (I even used it to prepare some lasagna). In conclusion… I can only recommend you try it. I know you will make it very often.

Ingredients for the savory pie with pane carasau

With these quantities, I made a square pie with 5 layers of bread in an 8.7-inch mold. Of course, you can use the mold you prefer and increase the ingredients without any issues. When you read the recipe, you’ll understand that the quantities are really irrelevant.

I bought pre-sliced scamorza cheese at the supermarket. This way, the slices are all equal and perfect. You can also use Fontina cheese if you prefer.

  • 7 oz pane carasau
  • 9 oz cooked ham (thinly sliced)
  • 9 oz scamorza cheese (sweet or smoked)
  • extra virgin olive oil
  • oregano

Tools

  • 1 Baking pan 8.7-inch square
  • Parchment paper
  • Grater with large holes

Preparation of the savory pie with pane carasau

  • Savory Pie with Pane Carasau
  • Line the baking pan with parchment paper previously wetted and wrung out.

  • Make a first layer of pane carasau after quickly wetting it under running water, then drizzle it with a little olive oil. It doesn’t matter if the bread breaks.

  • Cover with slices of cooked ham, then add slices of scamorza cheese.

  • At this point, start again with a new layer of pane carasau (always slightly wet) and continue as in the previous steps: bread + a little olive oil + slices of ham + slices of cheese. I made 5 layers of bread and finished with ham and strands of scamorza cheese obtained with a grater with large holes. Of course, you can make fewer layers if you prefer a lower savory pie.

  • Finally, sprinkle the surface with oregano.

  • Bake the savory pie with pane carasau in a preheated static oven at 356°F for about 20 minutes. Take it out and enjoy it hot. Very easy, right? Enjoy! Paola
