zucchini and ham frittata
A simple and quick recipe, great to make if we have little time available to prepare dinner or lunch! The frittata is already a delight, but with the addition of ham and zucchini, it’s even more so.

Ingredients for the zucchini and ham frittata:
- 2 zucchini
- salt
- extra virgin olive oil
- 3.5 oz ham
- Half onion
- 4 eggs
- 3.5 oz mozzarella cheese
Steps
The preparation for the zucchini and ham frittata is very simple and quick, watch the video HERE.
First, clean, wash and slice the zucchini thinly using a mandoline. In a pan, put some oil, the onion, and let them sauté. Add the sliced zucchini.
Cook for about 10 minutes. Meanwhile, in a bowl, put the eggs, a little salt, and beat with a fork. Add the diced ham and mozzarella, and mix.
Pour over the zucchini, spreading well. Cover and cook for about 10 minutes on low heat. Slightly detach the edge with a spatula if needed.
Turn the frittata using the lid. Cook for another 10 minutes on low heat.
