Ingredients for the zucchini and ham frittata:

  • 2 zucchini
  • salt
  • extra virgin olive oil
  • 3.5 oz ham
  • Half onion
  • 4 eggs
  • 3.5 oz mozzarella cheese

Steps

The preparation for the zucchini and ham frittata is very simple and quick, watch the video HERE.

  • First, clean, wash and slice the zucchini thinly using a mandoline. In a pan, put some oil, the onion, and let them sauté. Add the sliced zucchini.

  • Cook for about 10 minutes. Meanwhile, in a bowl, put the eggs, a little salt, and beat with a fork. Add the diced ham and mozzarella, and mix.

  • Pour over the zucchini, spreading well. Cover and cook for about 10 minutes on low heat. Slightly detach the edge with a spatula if needed.

  • Turn the frittata using the lid. Cook for another 10 minutes on low heat.

  • Enjoy your meal!
