Baked Polenta with Broccoli 🥦
A delicious yet very simple recipe, a base of polenta filled with broccoli, scamorza cheese, and spicy salami, a real treat! Of course, as in all recipes, you can substitute some ingredients like spicy salami with ham or sausage, scamorza cheese with provolone, or broccoli with cauliflower! Baked polenta with broccoli is a dish we can prepare well in advance and bake when needed, allowing us to organize ahead of time and spend time with our guests or family! It’s perfect to serve on holidays!

Ingredients for Baked Polenta with Broccoli:
- 4 1/4 cups water
- 1 3/4 cups fine cornmeal
- salt
- 1 broccoli
- 5 1/4 oz scamorza cheese
- 3 1/2 oz spicy salami (Cooked ham)
- 3/4 oz Parmesan cheese
Steps

First, we prepare the polenta. Put the water to boil in a pot and add salt. Gradually add the cornmeal while stirring with a whisk. Cook for a few minutes (check your package for cooking time).
Once ready, immediately place half of it in a baking dish and level it with a spatula. Add steamed or boiled broccoli.
Add the scamorza cheese pieces, the spicy salami, and cover with the remaining polenta. Sprinkle Parmesan cheese on top.
Bake at 356°F for about 40 minutes.
