- 1 Spoon
- 1 Knife

Preparation of sausage meatballs
First, soak the white bread in milk.
In the food processor, add the sausages (after removing the skin), the well-squeezed white bread, and the breadcrumbs, run the processor for 3 minutes.
From the dough obtained, form 16 meatballs, shape them into rounds and coat them with sliced almonds so they stick, place the meatballs in the pan.
Cook over medium heat for 10/15 minutes, gently turning the meatballs occasionally, they should be well-cooked and the almonds toasted in the end. They are ready to be served with the salad!
Wash the arugula well and drain.
Clean the champignon mushrooms by removing the skin and cleaning the stalks, wash and dry them, then slice them thinly with the mandoline.
In a bowl, combine arugula and mushrooms, adjust with salt and pepper, add the oil and mix well.
Plate by serving the salad in a bowl (I used a terracotta one) and place the sausage meatballs on top, enjoy!
