Ingredients
- 2.2 lbs broccoli rabe
- 1 clove garlic
- 3 oil-packed anchovies
- 1 leaf bay leaf
- 1 chili pepper
- to taste extra virgin olive oil
- 5.3 oz stracciatella
- 1 cup water (cooking water from the broccoli rabe)

Steps
The first thing to do is to thoroughly wash the broccoli rabe and remove the hardest leaves and stems.
Boil the broccoli rabe in plenty of salted water and save the cooking water.
In a non-stick pan, sauté the garlic, anchovies, and chili pepper. Add the rabe.
Cook the rabe for 5 minutes, adding the bay leaf.
Place the rabe in a cup after removing the bay leaf and chili pepper.
Add the stracciatella.
Blend the mixture into a cream using the immersion blender.
Enjoy the cream with a bit of stracciatella on top. Perfect with croutons, or as a pasta or risotto dressing.
