Fennel with Parmesan and Milk Gratin

Well, friends, after all these holiday dinners and lunches, I feel the need to detox from too many fatty dishes, so today Fennel with Parmesan and Milk Gratin. I assure you that prepared this way, you will love them. Fennel can really be cooked in many ways, even just gratinated with a bit of breadcrumbs on top, extra virgin olive oil, and they are delicious. Cooked in milk, however, they are really super tasty. Let’s say this can be considered the lighter version of fennel with parmesan and béchamel sauce. Now, diet permitting, if you add some slices of melting cheese to this recipe, the flavor will benefit, but even in their simplicity, they are really delicious.

Ingredients

  • 2 fennel bulbs
  • 1.75 oz chickpea flour
  • 1 tsp paprika
  • 1 pinch pepper
  • 1/2 cup milk (soy milk if preferred)
  • to taste salt
  • to taste extra virgin olive oil
  • 2 tbsps breadcrumbs

Tools

  • 1 Baking Tray

Steps

  • Pour the chickpea flour into a bowl

  • Add the paprika

  • The oregano

  • The pepper

  • Mix everything well

  • Slice the fennel thinly and coat it well in chickpea flour.

  • Pour some extra virgin olive oil on a baking tray lined with parchment paper

  • Arrange the fennel well and add some salt and Parmesan

  • Some breadcrumbs

  • Drizzle with a bit of extra virgin olive oil

  • the milk, and bake in a preheated oven at 350°F for 30 minutes
