Zucchini and Tuna Salad

Zucchini and Tuna Salad is a fresh and tasty dish, ideal for a summer lunch or dinner. An easy recipe with no cooking involved and it’s eaten cold.

Preparing this salad is a breeze, it’s all done raw. Just cut the zucchini into small cubes, and season with salt and lemon juice. Mix and let marinate for 30 minutes: this way the zucchini will cook thanks to the salt and lemon. Then, put the zucchini in a colander to remove all the excess water. Finally, season with extra virgin olive oil, tuna, and cherry tomatoes, mix everything well and the salad is ready.

Ingredients

  • 18 oz zucchini
  • 7 oz cherry tomatoes (red and yellow)
  • 6 oz tuna
  • 1 lemon
  • extra virgin olive oil

Steps

  • Let’s start preparing the zucchini salad: wash and dry the zucchini, cut them in half lengthwise and then each half into two parts.

    Cut again into strips to create small cubes.
    Place the zucchini in a bowl and add salt and lemon juice, mix and let rest for half an hour.

  • Now we just need to remove all the excess water that has come out using a colander.

  • Place the zucchini on a serving dish and add the chopped cherry tomatoes, tuna, and extra virgin olive oil.
