Ingredients
- 7 oz dried soy (in cutlets)
- 4 cups vegetable broth
- 1/2 cup water
- 1 1/2 cups breadcrumbs
- 1/3 cup chickpea flour
- salt
- extra virgin olive oil
What You Need to Cook Soy Cutlets
- 1 Air Fryer
How to Prepare Soy Cutlets in Air Fryer
Place the broth in a large bowl and heat it in the microwave for 8 minutes at 800 W.
Place the soy cutlets in the bowl to rehydrate and let them rest for 30 minutes.
While the dried soy is rehydrating, prepare the batter.
In a bowl put the chickpea flour and gradually add the water. Mix with a whisk to avoid lumps.
Lightly salt.
When the soy cutlets are soft, dry them.
Dip the soy in the chickpea batter, and then in the breadcrumbs.
Proceed the same way until you finish the rehydrated soy.
When all the soy cutlets are breaded, place them inside the air fryer basket.
Spray their surface with oil, then cook at 375°F for 10 minutes.
Flip the cutlets and finish cooking for 4 minutes, still at 375°F.
Serve the soy cutlets cooked in the air fryer while still hot.

The soy cutlets cooked in the air fryer are good just prepared, but you can store them in the fridge for 2 days.
