Today, a recipe a bit different from the usual first courses, main courses, or desserts. You absolutely must try these ginger and lemon candies because they are incredibly delicious and super easy to make. You will find all the properties of ginger enclosed in a melt-in-your-mouth, delightful bite. And yes… because, in terms of texture, they resemble toffee a bit. So if you have a sore throat or a cold, these candies will be perfect.

Ingredients for Ginger Candies

With these quantities, I made 10 medium-sized ginger candies.

  • 2.1 oz sugar
  • 1 teaspoon ginger powder (about 2 g)
  • 3 tablespoons lemon juice
  • 2 tablespoons maple syrup
  • powdered sugar

Tools

  • 1 Saucepan
  • 1 Hand whisk
  • Molds silicone candy molds

Preparation of Ginger Candies

  • Place the sugar and ginger powder in a saucepan and mix them.

  • Then add the lemon juice and maple syrup and mix well.

  • Transfer the saucepan to the heat and bring to a boil over low heat.

  • Boil for five minutes, then turn off the heat and pour the mixture into silicone molds. Chocolate molds are perfect. If you don’t have them and wish to purchase, you can find them by clicking HERE.

  • Let the ginger candies cool completely at room temperature, then remove them from the molds and coat them in powdered sugar so they don’t stick. I removed the excess sugar by shaking them through a fine mesh strainer.

  • I recommend wrapping each candy in a small piece of parchment paper before placing them in a jar. Store them in the refrigerator because they tend to soften and melt at room temperature. Enjoy! Paola
