Zucchini carbonara!
A delicious main dish, very simple to prepare and slightly lighter than the classic carbonara since we replaced the guanciale with zucchini, but if you prefer, you can use both! Personally, I love this pasta!

Ingredients for zucchini carbonara:
- 2 zucchini
- salt
- pepper
- extra virgin olive oil
- 1.75 oz pecorino
- 2 eggs
- 7 oz pasta

In a pan, put some oil, the sliced zucchini, and cook for about 10 minutes, stirring occasionally.
Add salt. Add the cooked pasta and a ladle of pasta cooking water. Meanwhile, in a bowl, put the eggs, a bit of salt and pepper.
Beat the eggs. Add the pecorino and mix. Put the obtained mixture on the pasta with the heat off and mix until you get a nice creamy texture.
