Fake Zucchini Frittata
A delicious zucchini “frittata” made without eggs in a vegan version! A great quick dinner recipe if we have little time available! In this version, I used vegan mozzarella, but you can also add any other type of cheese to your liking!

Ingredients for the Fake Zucchini Frittata:
- 2 zucchini
- 3.5 oz mozzarella (Vegan)
- oregano
- salt
- 3 tbsp flour
- garlic powder
- extra virgin olive oil
Steps
The preparation of the fake zucchini frittata is very simple, watch the video HERE.
First, wash, clean, and slice the zucchini thinly (I used a mandoline slicer). Add some oregano, garlic powder, salt, olive oil, and mix.
Add the mozzarella and flour and mix. In a pan, put some oil and add the zucchini, arrange them.
Cover and cook for about 10 minutes. Slightly detach the edge and flip it using the lid. Cook for another 10 minutes.
