Fake Zucchini Frittata

A delicious zucchini “frittata” made without eggs in a vegan version! A great quick dinner recipe if we have little time available! In this version, I used vegan mozzarella, but you can also add any other type of cheese to your liking!

Ingredients for the Fake Zucchini Frittata:

  • 2 zucchini
  • 3.5 oz mozzarella (Vegan)
  • oregano
  • salt
  • 3 tbsp flour
  • garlic powder
  • extra virgin olive oil

Steps

The preparation of the fake zucchini frittata is very simple, watch the video HERE.

  • First, wash, clean, and slice the zucchini thinly (I used a mandoline slicer). Add some oregano, garlic powder, salt, olive oil, and mix.

  • Add the mozzarella and flour and mix. In a pan, put some oil and add the zucchini, arrange them.

  • Cover and cook for about 10 minutes. Slightly detach the edge and flip it using the lid. Cook for another 10 minutes.

  • Enjoy your meal!
