Gnocchi with Ham, Robiola, and Saffron

Ingredients for Gnocchi with Ham

  • 1.1 lbs potato gnocchi (also called chicche)
  • 1 shallot (medium-large)
  • 1 clove garlic
  • 3.5 oz cooked ham (in one piece)
  • 3.5 tbsp dry white wine
  • 3.5 tbsp milk
  • 1 packet saffron
  • 3.5 oz robiola cheese
  • 1 bunch parsley
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of Gnocchi with Ham

  • Peel the shallot and garlic clove and chop them finely.

  • Cut the slice of cooked ham into small cubes. If, to save time, you use a package of ready-made ham cubes, I suggest chopping them further because they are always too large.

  • In a large skillet, heat a few tablespoons of oil then add the garlic and shallot. When the sauté begins to sizzle, add the cooked ham.

  • Sauté for a few minutes, then pour in the white wine, increase the heat, and let it evaporate.

  • Then add the milk and the contents of a packet of saffron. Stir, then also add the robiola cheese and let it melt completely. Mix all the ingredients well and adjust the salt. If the sauce is too thick, add a few more tablespoons of milk or some of the gnocchi cooking water.

  • Meanwhile, bring plenty of salted water to a boil. When the water boils, throw in the gnocchi and cook them until they float to the surface. Drain with a slotted spoon and transfer them directly to the skillet with the sauce.

  • Gently mix to combine all the ingredients well and season with a grind of black pepper.

  • Distribute the gnocchi with ham on individual plates, sprinkle with finely chopped parsley, and serve immediately, piping hot. Enjoy! Paola
